Pieces of meat, typically beef, which prepared with oodles of love are an emblem of Basque cuisine.
Achieving the best taste lies equally in the quality of the meat and in the chargrilling technique.
The preparation of txuletas is a ritual in itself.
First, and after months of ageing, the meat is tempered before being chargrilled at the exact heat and only with salt as a condiment.
The level of doneness is as delicate as it is important to extract the three sacred colours in each piece: the well-charred dark brown that seals the outer layer and the second pinkish layer that transitions to the third layer, the juiciest and the reddest, marbled with tiny streaks of ingrained fat.
